These Dong Ding Oolongs are from the Chin Shin cultivar (also known as Qingxin) and are sometimes referred to as Tung Ting Oolongs. They are from Lugu in Nantou County, located in central Taiwan. The tasting flight includes one ounce each of the same tea, with a light, medium, and dark roast (three ounces total). The tea has a distinct creaminess which is elevated with the different levels of roasting, bringing out different flavors such as caramel, dark chocolate, and toastiness. It is a rare treat to find the same tea with three different levels of roasting, allowing a unique opportunity to see how the flavors develop!
Dong Ding Mountain (meaning Frozen Summit or Icy Peak) is one of the most famous oolong tea producing regions in Taiwan. The area has the ideal climate and soil conditions for oolong tea cultivation and coupled with tea making traditions from tea masters renowned for excellence, these oolongs are truly superb!
Brewing notes: If possible we highly recommend the gong fu brewing method using a small clay teapot. Brew the tea at a temperature between 195-205° F for about 4-5 minutes. A first rinse of tea is optional. Subsequent steeps can be shorter, approximately 2-3 minutes. Each serving can be brewed 4-5 times. Using the gong fu method you’ll taste how the tea changes with each steep, allowing the flavors to develop as the tea opens up.
